Cod heads hung to dry. Iceland has produced stock fish, or air dried fish, for centuries and an export market was established with Nigeria many decades ago. As stock fish prices have risen, a trade in heads with or without backbones has developed. These are the waste from fish processors after the fillets have been removed. The dried fish, reconstituted, are used for flavouring traditional Nigerian dishes. | |
