Coconut flour is a high fibre flour often used by people on gluten-free or grain-free diets. Coconut flour absorbs a lot of liquid, which is why most recipes call for a very small amount of flour. Instead of xanthan gum used in gluten-free baking, a higher number of eggs is used with coconut flour. Botanically, the coconut fruit is a drupe, not a true nut. The mesocarp is composed of a fibre called coir, which has many traditional and commercial uses. The flour has been developed for use in baking, to combat malnutrition. The flour does not contain starch. | |
