Lentils were cooked to become overcooked and the cotyledons were fractured and the fragments were examined by environmental SEM (ESEM) in hydrated state (no fixation,no dehydration,no coating with gold). The images show starch granules (white) moved from the cotyledon cells (empty greenish wells in the background are the cell walls). The environmental scanning electron microscope or ESEM is a scanning electron microscope that allows for the option of collecting electron micrographs of specimens that are wet, uncoated,or both. Enhanced ESEM. Image width: 302.7 micrometers. Magnification: 330x if the image is printed 10 cm wide. Bar: 50 micrometers | |
