Distillery. Artwork of distillation apparatus used in 1799 in China to make an alcoholic rice drink called saut-choo. Saut-choo was made by concentra- ting the alcohol content of a fermented rice drink by heating it in a still. Alcohol is more volatile than water,so there is a greater concentration of it in the vapour than there is in the remaining fluid.
