Louis Pasteur (1822-1895),French chemist and microbiologist,at the age of 18. Pasteur published his "theory of fermentation" in 1857,which stated that fermentation is caused by micro- organisms. He introduced pasteurization,subjecting milk,wine or food to a short burst of heat,to kill these organisms. Pasteur went on to develop the germ theory of disease. In 1879,he found that an old culture of the bacteria causing chicken cholera did not cause the disease in chickens,but protected them from infection by a fresh culture.
