Cocoa pods and nutmeg on a market stall. Cocoa pods (Theobroma cacao, upper left and right) contain the cocoa beans (seeds) from which chocolate is made. Nutmeg fruit (Myristica fragrans, centre) split when they are ripe to reveal their seeds. The seeds are covered in aril (red),which is removed and dried to make mace. The seeds are dried before being sold whole or powdered for use in sweet and savoury dishes. Photographed in Grenada | |
