Iodine value test. Nut (left) and sunflower (centre) oils one hour after having ethanolic iodine (right) added to them. This test determines the degree of unsaturation of a fatty acid. The more unsaturated an oil is the more double bonds there are between carbon atoms. The double bonds react with iodine,which can be seen by a dilution in the iodine's colour. The nut oil is monounsaturated,that is it has one double bond,and so it is a brown colour. The sunflower oil is polyunsaturated,that is it has more than one double bond,and so it is yellow. Measuring the amount of iodine needed to make the iodine and oil solution retain the colour of the iodine,allows you to determine the degree of unsaturation | |
