Stainless steel 20 centimetre cook's knife. The knife blade is made from X50CrMov15 stainless steel, steel alloyed with chromium, vanadium and molybdenum, a formula that gives a very hard metal that is resistant to corrosion and staining while maintaining good edge sharpness retention. In addition there are also small amounts of manganese, silicon, phosphorus and sulphur in the mix while carbon is just 0.55 per cent. The hollow handle is welded onto the tang, an extension of the blade where the knife is held. | |
