Alfalfa, a type of legume, is used as animal feed. It is also used on irrigated land to improve the quality of the soil so that subsequent crops yields are increased. The alfalfa plants improve the soil because bacteria in their roots convert (fix) atmospheric nitrogen into nitrate chemicals which are essential plant nutrients.
