Elk thistle, Cirsium foliosum. Found from the Rocky Mountains west to CA and south into NM. It is unusual for a thistle in preferring wet meadows. Peeled coooked stems are a tasty vegetable. The species name foliosum means leafy; an appropriate description of this unusual thistle. Photo Yellowstone National Park, WY. | |
