Caramelization of sucrose. A test tube with sucrose (table sugar), C12H22O11, is placed over a Bunsen burner flame. When heated, sucrose undergoes caramelization, resulting in characteristic brown colour. Caramelization is chemical decomposition in the absence of oxygen (pyrolysis).
